In February’s Bronx Farm to Table, home cook Regina Roberts will show us how to transform two traditional staples of African foodways, jollof fonio (an ancient West African grain) and black eyed peas, into an American classic, a burger. Paired with plantain fries, this Diasporic plate will reconnect us to nutritious ways of caring for ourselves from our cultural backgrounds.
